Beef Stew

The weather changes quite a bit in Tulsa!  One day it will be super warm and nice - but the next day it can drop 20 degrees!  I decided after the first time this happened we needed to have some warm dishes on hand to whip up on these chilly days!

I have never made a stew.  I don't remember eating stew at home with my parents.  But for some reason I was craving stew.  I make an awesome Minestrone soup - but we had just had that the week earlier.  I decided to venture out and create a stew - in my awesome new crockpot of course!





Ingredients:
4 cups of cubed red potatoes
1 yellow onion - diced
3 cloves of garlic
2 bags of mixed vegetables
3 cubes of "Better than Beef Bouillon" 
1 28oz can of crushed tomatoes
1 28oz can of whole peeled tomatoes
1 half of a bottle of beer (soda will work fine too!)
1 box of vegetable broth
1 tablespoon of thyme
1 tablespoon of parsley
1 tablespoon of oregano
1 tablespoon of crushed red peppers
2lbs of beef stew meat

1. Brown stew meat in a skillet.
(The meat does not need to be cooked - just browned.)


2. Cube potatoes and measure 4 cups.
3. Add all ingredients to the crockpot.
4. Cook on low for 7 hours.



ENJOY!





** I love to serve this with cornbread.  With almost anything I make - I immediately set aside half of the stew and freeze it for a later date.  That way when the weather turns quickly, I have a nice warm stew to heat up and eat!
